My quest to replicate the steakhouse experience in my kitchen even extended to the point of dry-aging beef at home. My obsession and respect for this amazing protein also fostered a desire to learn about the entire beef life cycle: from cow/calf operations to stockers and backgrounders; from corn farms to grazing ranches; from forage to feed; from fabrication floor to front of the case, and all the way back to the restaurant again.
